From COS, one of Sicily’s true benchmark producers, who are certified organic and farm biodynamically. They emphasise wines of purity and freshness, rely exclusively on indigenous yeasts and eschew any overt oak influence.
The Rami is a skin contact ‘orange’ white wine made from 50% Grecanico (a Sicilian variety of Soave’s grape, Garganega) and 50% Insolia. The wine spends a week on skins before being aged for 9 months in neutral vats. This wine has gorgeous aromatics, leading into honeyed peach and orchard fruits with gentle tannins adding depth and texture. An intriguing wine from a benchmark producer of the style, this is a great introduction to orange wines.

Crushed green apples, gingery spice, chamomile and dusty dried flowers create a unique yet captivating display as the golden-hued 2020 Ramì blossoms in the glass. This is deeply textural with a balanced inner sweetness to match, as ripe orchard fruits and honeyed inner florals flesh out across the palate. While not the last note in depth, it’s incredibly fresh, framed nicely by nuanced tannins and leaving the mouth watering for more. The Ramì is a blend of 50% Grecanico and 50% Insolia.
