Cabernet was originally permitted as a blending component in Valpolicella and is still used by many but the Campedelli family had very different ideas for what this variety meant in Valpolicella, hence they only use this in it’s own bottling or as part of their field blend called Calto. Hand picked in two tiers roughly a fortnight apart the first parcel destined for apassimento the second vinified conventionally then re assembled on the blending table prior to bottling, this is a truly unique expression of cabernet.
