"Tonic’s rose has always been about a savoury style. That comment may seem now cliché, but Glenn has always wanted his Rose to be focused around food.
Even mighty Bandol, France’s most ‘gastronomic’ rose region, has been feeling the pressure of the commercialisation of the Rose category, adding more Grenache into their traditional Mataro based blends to appease the demand for aperitif style Roses.
This wine has always been a blend of Mataro and Grenache however this year 70% of the cuvee is Grenache, due to the low yields of Mataro from Clare in the warmer 2019 vintage. Hand-picked, crushed and immediately basket pressed, leaving some time with the skins of course to add the colour and texture. Wild ferment begins, then left in seasoned oak before bottling." - Distributor's note
